Bolón de Verde
Mashed green plantain ball stuffed with cheese or chicharrón, pan-crisped to order.
BreakfastEncebollado
Albacore and yuca stew, slow-simmered with red onion and tomato. Served with chifles and lime.
MainsSeco de Pollo
Chicken braised in cilantro, naranjilla and beer. Rice, sweet plantain, avocado.
MainsEmpanada de Viento
Hand-folded cheese empanada, fried until puffed and dusted with sugar.

Cassava-and-cheese rolls baked fresh — best within an hour of the oven.

Mamá Manaba is a tiny home kitchen built around family recipes from the Manabí coast of Ecuador. Every empanada is folded by hand, every stew simmered the way it's been made for generations.
We cook one day a week — Saturday — so we can do it right. Pre-order through the site, pick up warm, and eat the way Manabí grandmothers feed their family.
